Dear Watertown Public Schools Faculty, Students, and Families,
This week we passed 100 days of school! And, as we get ready for the weekend, many schools got their team spirit in gear by wearing their favorite jerseys to school. If you’re gearing up for Superbowl weekend, here’s a tried and true ‘Chili’ Recipe from the Villanuevas…(maybe with a few borrowed Food Network tricks)!
2 medium onions
1 clove garlic
Olive oil
2 level teaspoons chili powder
1 heaped teaspoon ground cumin (or crushed cumin seeds)
Sea salt and freshly ground black pepper
3 oz of sundried tomatoes in olive oil
1 pound chuck, minced or ground
1 fresh red chile, deseeded and finely chopped
2 (14 oz) cans chopped San Marzano tomatoes
2 dashes of cinnamon
5 ounces water
2 (14 oz) cans red kidney beans, drained
Chop up the onions and garlic and fry in some olive oil until softened. Add chili powder and cumin and add a dash of: onion powder, garlic powder, salt, and pepper.
Add meat to the pan, cook until lightly browned.
Place sun-dried tomatoes and chile in the processor with the oil and blend to form a paste. Add these to the beef with the tomatoes, cinnamon, and a cup of water. Add another dash of: onion powder, garlic powder, salt and pepper…and you can always add a little more, if need be.
Bring to the boil, cover with lid, then turn the heat down to simmer and cook for 1 1/2 hours.
Add the red kidney beans 30 minutes before the end of cooking time.
Yield: 6 to 8 servings
Prep Time: 5 minutes
Cook Time: 1 hour 50 minutes
